(E) Taro tubers contain micronutrient compounds in the form of zinc and ferrum
subtance which can be closely related to nutritional problems, namely stunting.
This study aims to formulate of effervescent granules dry extract of taro tubers
with variations in tartaric acid factor and PVP. This study was designed using a

factorial design with factors namely tartaric acid (20-25%) and PVP (2.5-5%).
Tests were carried out on effervescent granules which included particle size
distribution, moisture content, dispersed time, and pH. Analysis of factors and
their interactions was then followed by formula optimization using the Minitab
20 software program response optimizer. Based on the test results, pink
effervescent granules were obtained; smells of strawberries; has a sweet taste,
granule size in the range of 279.0085-357.4121 µm, moisture content in the
range of 0.62 - 0.69%, dispersion time in the range of 64.33-70 seconds, pH in
the range of 5, 31-5.86. The results of the analysis of factor effects and their
interactions show that an increase in the concentration of tartaric acid can affect
the response of the particle size distribution and pH. Meanwhile, increasing PVP
concentration affected the response of moisture content and dispersion time. The
optimum formula obtained in this study was a concentration of 20% tartaric acid
and 5% PVP concentration. The conclusion of this study is that taro tubers can be
formulated in an effervescent dosage form with a factorial design of 2
that meets
the physical quality requirements.
